Roasted Vegetables and Tandoori Salmon


A warm summer afternoon lunch, and no body wanted to have a heavy curry dish, so I thought why not  have roasted vegetables instead.
They are so juicy and try to use vegetables that are in season,  fresh produce always tastes more flavorful.
The key to having well roasted vegetables, is begin with first baking them in oven, and later turn the option from bake to grill, for last few minutes.
My favorites, to bake  are colorful bell peppers, onions, egg plant , asparagus. But you can definitely use other vegetables of your choice, just be sure to spread them out well on the baking tray, as if they are too close they wont bake well.

Ingredients:

4 to 5 small bell peppers
2 to 3 egg plant
1 medium red onion
1 bundle asparagus
salt  to taste
black pepper
olive oil to drizzle on top of cut vegetables.
3 to 4 pieces peeled fresh garlic 
1 to 2 Fresh sprigs of herbs



Cut out vegetables and lay them on a baking tray

Drizzle olive oil, add salt, black pepper to asparagus 

Roast vegetables in the oven

Take out and then grill the vegetables back in oven

Method:
1.Using a knife cut out vegetables, with 1 inch lengthwise or into cubes. Asparagus ends tend to be tough so you can trim them or peel them.
2. Lay them onto a baking tray, sprinkle salt and black pepper over them. Drizzle olive oil to coat the vegetables and garlic. Using a spoon stir vegetables slightly. Top with fresh herbs, like thyme, rosemary or one of your choice.( if you like herbs, or omit that step)
3. Bake initially, for about 20 minutes, till  vegetables and garlic  seemed cooked and little soft. Then grill for another few minutes. Serve hot with toasted bread sprinkled with olive oil. I served this dish with grilled tandoori salmon.

This is healthy way to eat vegetables and very easy to prepare too.

Chicken Salad

 Chicken salad is one of my favourite salad's, it  can be made in many ways with different ingredients, though main ingredient is chicken , but one can add nuts like walnuts, roasted pecans, slivered almonds and fresh herbs to bring out the flavours of this dish. It is  served cold and leftovers can be used  for preparing chicken sandwiches.

Ingredients
2   medium sized boneless ,skinless chicken breast
1/4 tspn  finely chopped tarragon leaves
1/4 cup finely diced green onions and chop the stem of the onions too
1/2 cup finely diced celery stalks
1 boiled egg cubed
1 bowl freshly chopped lettuce leaves 
1 bag mixed greens salad leaves
1 cup seedless red and green grapes cut into halves.
Dressing
1/2 cup mayonnaise
 1/4 cup buttermilk
1 tbspn honey
2 tspn salt
1 tspn black pepper
1/4 cup olive oil



Chicken Salad 


Method.
1. Brush each chicken breast with olive oil, season them ,both sides salt and black pepper,rubbing it all over the chicken breast nicely. Place onto a baking tray and bake for approximately 15 to 20 minutes at 375 degrees, till the juices from the chicken breast appear clear and chicken is done., then cut chicken into 1/2 inch cubes and place into a salad bowl.
2. Next for the dressing take  mayonnaise in a separate  bowl , add in 1 tspn salt, add butter milk ,1/2 tspn pepper, honey to lessen the acidity from buttermilk and tarragon leaves. Slowly mix in olive oil and Whisk together and dressing is ready.
3. To assemble this salad , to the chicken  add in green onions, salad leaves and diced boiled egg , next, pour in  prepared dressing. lightly mix in the grapes . Cover and refrigerate for an hour , enjoy this salad any way you like it, over lettuce leaves, or in a sandwich :))

Crunchy coated nuts

This week I'm hosting our Diwali party for friends and family  and we thought why not make some crunchy nuts to go along  with cocktails, I came across this recipe and was waiting to give it a try...
You may  use any nuts, depending on your liking . I have used... 
Ingredient's
250 gm unsalted cashews
250 gm unsalted walnuts
100 gm almonds
100 gm pecans
1/4 cup orange juice
2 tablespoon cooking oil
1/4 cup maple syrup
2 tspn salt
2 tspn red chilli powder
1/4 cup brown sugar
2 sticks fresh rosemary chopped finely


                                                 







Ingredients
Mix all the nuts together


Nuts on baking sheet
Bake at 350 degrees  

Crunchy baked nuts
Perfect with cocktails and entertaining guest

Method.
1.Pre heat oven to 350 degrees, Spray oil on to baking sheet or use 1 tablespoon oil to coat the baking sheet .Arrange  nuts on baking sheet. Add oil , maple syrup ,orange juice,brown sugar,salt,red chilli pepper for heat  and finely chopped fresh rosemary leaves. Mix all together nicely and bake in oven for 10 to 15 minutes at 350 degrees . Keep checking.
2.Remove from oven and mix with a spoon  to separate nuts, that may stick together. Check for seasoning , sprinkle on top 1/4 tspn rosemary and check for salt, if less add little more,depending on taste.
3. Enjoy golden brown crispy , coated with sweet and spicy,  flavourful nuts with your favourite drink or cocktail.
